Thai-Style Vegetable Curry

My friend Randi, who introduced me to the 21-Day Vegan Kickstart, suggested this website for recipes.  I made the Middle Eastern Wraps about a week ago but I didn't really care for it.  I really like the Thai Vegetable Curry, and in fact I have made it twice.  Not much preparation involved.  I simply cut up the broccoli, sweet potatoes and mushrooms while I heated the chickpeas in the oven.  Then I mixed them up with some spices, cooked it up and I was ready to eat.  I'll probably use some hot sauce when I make it again for a nice kick, but the coconut milk does it give it a good flavor.
