Vegan Chicken Marsala Masala with Fresh Morels

Delicious!  I think I forgot how good marsala wine was.  Spices do help, including the garam masala I used, but wow, the marsala wine took this to the next level.  A sweet taste with a lot of flavor.  I couldn't find the MimicCreme at Whole Foods so I used Silk Creamer.  For the vegan margarine I used Spectrum Canola Oil Spread.  For the chicken, I used Gardein Tuscan Breasts.  I couldn't find morel mushrooms so I used portobello mushrooms.  I also used penne rigata pasta.  I need to start searching "vegan marsala wine recipes" now to try to find things to cook that are just as good.
